Most cultures have a tradition of pickling food — which is by no means limited to cucumbers — but it's the Japanese who've refined pickling to an art form. "The top country for pickles is generally accepted to be Japan," writes Alan Davidson in "The Penguin Companion to Food." Anything goes.
