5 ml : oil, vegetable
40 g : shallots, fresh, chopped
40 g : garlic, fresh, chopped
10 g : chilli padi, fresh, chopped
20 g : ham, Yunnan, sliced
40 g : canopy
40 g : shrimp, dried
2 g : shrimp thiny, powder
40 ml : sauce, red sweet
25 ml : brandy
1 pch : salt and freshly ground white peppercorn
1 pch : chicken, powder
Steam Yunnan hams for 30 minutes. Heat oil and fry shallots, garlic and dried shrimps until crispy.
Add the red sweet sauce and all the rest of the ingredients (for the canopy, only add 1/2 of it) and fry for 3 minutes.
Add brandy and adjust seasoning. Remove and keep warm.
